Black Bean Molasses Bread
I really like bread and baked goods. A lot. Often, to the exclusion of other food groups. I also like to make bread, and am always looking for ways to improve my bread-making skills. One thing I’m lacking is good recipies for sandwich breads–close-grained, tender breads that can stand some abuse before being eaten. I also want to make interesting breads, with added nutritional value such as fiber and protein. This recipe fits the bill. It’s also darn tasty, which is a plus. I’m planning on having it as a grilled cheese sandwich for lunch today.
If you want to make this bread more kid-friendly, I suggest omitting the chili powder and cayenne. That way, it will just be a tender, mildly sweet loaf without the grown-up kick. You could easily make this in a bread machine, just make sure the beans are thoroughly incorporated into the liquid before you add the flour.
